The room
Cail Bruich is a small, family-run restaurant on Great Western Road in Glasgow's West End, opened in 2008 by the brothers Chris and Paul Charalambous. In 2021 it won a Michelin star, the first in Glasgow in roughly eighteen years, since Gordon Ramsay's Amaryllis, and has held it since. The star was won under Lorna McNee, the first woman in Scotland to hold one, who now oversees the kitchen as chef director.
The cooking
The format is a Scottish tasting menu that moves with the season: game from the Highlands, seafood off the west coast, a wine list that rewards curiosity. The city waited a long time for a table at this level, and this is the one that ended the wait. The tasting menu runs around 125 pounds, with a shorter five-course lunch on Friday and Saturday.
