Zaborin occupies a private valley outside Kutchan, near Niseko, with fifteen villas, each with its own indoor and outdoor onsen fed by natural thermal water. The architecture is poured concrete and wood, built for cold light, negative space and the silence of a Hokkaido winter or summer rather than for nostalgia.

Executive Chef Yoshihiro Seno cooks Kita-Kaiseki, a northern reading of the Kyoto form drawn from Hokkaido's larder: spring water off Mount Yotei, Ezo deer, sea urchin from the Japan Sea coast. Dinner and breakfast are included, and each meal differs from the last.

Winter is the peak, when the valley fills with snow and the onsen does its best work; reserve six months ahead. Summer is quieter, with longer evenings and a different quality of light. Both are worth understanding on their own terms.
